this page is illustrating the different builds of INTEL hackintosh; earlier versions of OSX require a PPC processor powered Macintosh G3/G4

Using older audio production software with an older version of OSX helps us to make use of older audio hardware aswell which often support is dropped like a bad habit by software developers trying to keep their business profitable

from what ive read it seems the newer generation of graphic cards were added in 10.12.6 (osx update to Sierra that was released in July 19, 2017 just prior to the release of High Sierra)

in the mac world - its a general rule or law that you dont install an earlier version of OSX on a machine that didnt already exist when that OSX version was released/dated. for example you wouldnt try to install Tiger on a 2008 Mac that shipped with Leopard installed; because that machine might have hardware that requires driver support that couldnt be included in the earlier os release because it didnt exist yet; should that logic extend to the hackintosh world? might be best to adhere to that general rule/law for hackintosh aswell.

however; its more than ok to install a later version of osx onto an older chip and this happens quite alot.ie: a mac made in 2008 can run up to El Capitain osx which is released in September 2015!!! (7 years later) so you shouild be able to do the same with hackintosh osx versions; but i would stick to a range of about 4 years out to avoid slow performance; so whatever the current release was when your cpu was made, i would go 2-3 osx versions after that safely but no further; so if i had a conroe extreme cpu, i would be ok running up to osx lion; but after that performance might not be up to best expectations;

in Most cases i dont think it would be advisable to use a Graphics Card with an OSX Version that PRE-DATES that graphics card's own release date. so you wouldnt want to take a Radeon HD 4890 and use it with OSX Tiger; because that specific card probably did not exist initially or when tiger was still being updated

which of these options you choose depends mostly on:
your CPU; http://www.cpu-upgrade.com/CPUs/Intel/index.html
your graphics card;
your software you own/have;
